Its very true, we can’t function without our coffee, especially if you need the Pretty Nerds to build a website from scratch. All that CSS & HTML coding can be tedious at times, we need to stay sharp and focused. So coffee definitely helps our mental stamina. Of course we can’t just have regular coffee, we love luxurious gourmet coffee, like a Date Cappuccino perhaps, or a Agave Iced Latte. We love our gourmet coffee, so here is our recipes so you can enjoy them too 🙂
Prep time: 2 mins | Cook time: 15 mins | Total time: 17 mins
1 cup of seedless dates / pitted dates
1 cup of hot boiling water
Wash dates to remove any oils or stabilizers that might be used. Soak them in hot water for about 2 hours. If using a softer variety like medjol you might need to soak only for a while.
Mash the dates using a masher, strain through a cheese cloth to get the liquids.
Place the pulp back to the soaking bowl and Add more water, mash and filter again.
Add this water to a heavy bottom pan and boil, stir to prevent burning.
Boil until it thickens, like the consistency of honey. Fairly takes around 10 minutes.
Place milk in a 1-cup microwave-safe measuring cup. Microwave, uncovered, on high for 1 minute or until milk is hot and small bubbles form around edge of cup.
Place a metal whisk in cup; whisk vigorously by holding whisk handle loosely between palms and quickly rubbing hands back and forth. Remove foam to a small measuring cup as it forms. Continue whisking until foam measures 1/3 cup; set aside.
Pour Espresso into a mug; pour in remaining hot milk. Spoon foam over top and serve immediately. Yield: 1 serving.
Pour desired amount of Date Syrup into your cappuccino as a sweetener.
Agave Iced Latte
Freshly brewed coffee (regular or decaf), frozen in ice cube trays
1/2 – 1 teaspoon pure vanilla extract
1 teaspoon agave nectar
Measure out vanilla extract and agave in the bottom of a glass. Fill the glass with frozen coffee cubes (I used 5 big cubes for an 7oz glass) and then fill the glass up with the coconut milk. You are looking for a 50/50 ratio of coffee to milk. Mix together with a spoon and let it sit for five minutes. Stir again and start drinking. Adjust agave or vanilla to your liking.
